Ingredients

    16 graham crackers
    1 cup espresso or coffee
    1 tbsp frangelico or rum

    2 blocks of fat free cream cheese
    4 tsp splenda
    3/4 cup vanilla fat free soy milk (or skim milk)
    1 tbsp vanilla extract

    Pinch of cocoa

Directions

Mix espresso and liquor in a mug.
Layer half the graham crackers in the bottom of a 9x13 dish. Spoon espresso mixture over the graham crackers until moderately moist. (Don't oversoak) Let it sit to absorb the liquid for 5 minutes while you mix the filling.

In a large mixing bowl, combine 2 bricks of fat free cream cheese, 3/4 cup fat free vanilla soy milk, 1 tbsp vanilla extract, and 4 tsp of splenda.
Use a mixer and blend until smooth & creamy.

Scoop half the cream cheese mixture over the soaked graham crackers. Smooth out.
Add another layer of graham crackers, and spoon more coffee liquid over them. Allow to sit for a few minutes, then add and spread another layer of cream filling.

Smooth it out, and sprinkle some cocoa over the top layer.

Refrigerate for at least 2 hours.

    I threw this out. We disliked it intensely. Perhaps I made an error in measurement or prep. (Is '1 graham cracker' ingredient one square or 1 sheet (2 sq)? (I guessed you meant 1 square.) Also, what is a 'block' of cream cheese--8 oz? I used 16 oz total--waaay too much for the 8 gr cracker base - 7/16/07

    I think the cream cheese is too much. I find 1 block is a-ok and i combine that with fat free cool whip. It makes it fluffier and much richer. Plus it does not require any sweetner after that.

    Overall a very good start to a tiramisu recipe!
