2.5 lbs. Chicken Breast, boneless, skinless1 large onion6 carrots4 stalks of celery1 tsp crushed garlic3 15oz cans white beans2 14oz cans chicken broth, fat free, low sodium
Cut chicken into bite sized pieces, cook in 1TBLS olive oil.
Put in big pan or crock pot.
Finely chop or process onions, carrots and celery and add.
Add chicken broth, beans(and liquid) and garlic.
Bring to boil then simmer for 30 minutes or longer.
Makes 13 1 cups-servings
