2 cups potatoes, peeled and diced1/2 cup celery, sliced1/2 cup carrots, sliced1/4 cup onion, chopped1/4 teaspoon pepper2 cups boiling water1/4 cup butter1/4 cup flour2 cups milk2 cups sharp Cheddar cheese, grated1 cup ham, cooked and cubed
Combine first 6 ingredients in a 3-quart saucepan. Cover; simmer 10 minutes. Set aside. Melt butter; add flour and milk. Cook on medium until thickened. Add cheese; stir until melted. Add ham and sauce to vegetables. Heat (do not boil). Yield: 6-8 servings.
