Ingredients
2 onions 325g1 head of garlic1 tablespoon olive oil4 small zucchini/courgette 390g1 eggplant 400g1 red capsicum 180g1 green capsicum 150g5 tomatoes 345g2 bayleavesthymebasilsaltpepper
Directions
1. Peel and chop onion and garlic.
2. Put on large saucepan with olive oil.
3. Turn up heat.
4. Chop eggplant, zucchini, tomato and capsicum.
5. Add to onion.
6. Add seasonings
