Whole Wheat Pancakes

1 cup whole wheat flour2 Tablespoons sugar2 1/2 teaspoons baking powderScant 1/2 teaspoon salt1 cup 1% milk1 large egg2 Tablespoons Smart Balance 50/50 Butter Blend, Original
the pancakes will be fluffier if you have all ingredients at room temperature.
In a small bowl, combine the flour, sugar, baking powder and salt. Mix together thoroughly.
In a medium bowl, whisk together the milk and the egg. Whisk in the melted butter in a slow stream.
Add the dry ingredients to the wet ingredients and mix gently, just enough so that there are no dry pockets or flour. Do not overmix.
Preheat a non-stick skillet. For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until there are lots of small bubbles popping on the surface of the pancake, then flip and cook on the other side for a minute or so.
Serve with your choice of toppings (not included in nutritional info).
Makes 8 pancakes.
