Sausage and Black Bean Soup

Ingredients
Cooking spray8 oz turkey kielbasa sausage, sliced1 cup diced green, yellow, or red sweet pepper1 (14.5 oz) can fat free, reduced sodium chicken broth.1 (15 oz) can black beans, rinsed and drained1/4 cup picante sauce or salsaChopped cilantro (optional)
Directions
Coat a medium saucepan with cooking spray; place over medium-high heat until hot. Add sausage, and saute 1 minute or until sausage begins to brown. Add pepper; saute 1 minute.

Add broth; bring to a boil. Reduce heat to low; add beans and picante sauce, and simmer, covered, 5 minutes. Top with cilantro if desired.

Makes 4 (1 cup) servings.

    I've been making this soup for years and my family loves it. I double it, using the huge can of Swanson's chicken broth and just doubling everything else. Very nice topper with a little chopped avocado too. - 2/4/14
