Olive Oil, 2 tbspBroccoli, fresh, 1.50 cup, chopped Onions, raw, 1 cup, minced Green Bell Peppers, 1.50 cup, diced Potato, raw, 2 cup dicedBeans, black, 0.50 cupBeans, pinto, 0.50 cupNutritional Yeast, 3 tablespoonsSpices (your choice of flavoring- I put cumin seeds, a chopped up jalapeno, garlic, and a little salt)
Preheat your skillet on medium heat & pour on the olive oil. At this point, I put in my spices- cumin, garlic in most cases. After they start to brown, I throw in the onions, garlic & jalapeno. As the onions start to brown, add in the potatoes and let them cook for a 3 or 4 minutes on their own, mix so they don't stick!
Add in the other vegetables & beans, mix thoroughly and put on the lid, drop the heat down to low and let everything cook on for 10 - 15 minutes (or longer, depending on how well done you like your veggies, especially broccoli).
Give it a good mix, sprinkle on nutritional yeast and salt and eat!
