Split Pea Soup

1 lb split peas1 cup diced ham (95% lean)1/2 cup onion, chopped1 medium carrot, shredded (about 1/4 cup)1 1/2 tsp garlic powder1/4 tsp thyme leaves1/4 tsp paprika1 tbsp olive oil7 cups water3 tsp Better Than Bouillon Chicken Baseblack pepper (to taste)
Sort split peas and rinse with cool water. In a stock pot or large saucepan, combine peas with 6-7 cups water. Boil for 2 minutes. Remove from heat and let stand 20 minutes. Drain and set aside.
In stock pot or saucepan, saute diced ham, onion, carrot, spices, and olive oil until onions are translucent. Add bouillon, water, and split peas. Simmer for one hour or until split peas are tender.
