Lemon Orzo with Chicken

4 cups low sodium chicken broth 1 tablespoon unsalted butter (to grease the baking dish) 2 tablespoons butter 1/4 teaspoon ground pepper 1 lb chicken tenderloins, cut into 1-inch pieces 1 lb orzo pasta 8 oz feta, crumbed (reduced fat)1 tbs dill 2 teaspoons lemon zest, finely grated 1 tablespoon fresh lemon juice
1. Preheat oven to 400. In a small saucepan over high heat, bring the broth, 1/4 cup water, butter, salt and pepper to a boil.
2. Meanwhile, grease a 1 1/2 quart casserole dish with unsalted butter. Combine chicken, orzo, feta, dill, lemon zest and juice in the casserole dish. Pour the hot broth mixture over it and stir once, gently, to incorporate.
3. Bake until bubbling and starting to brown, and the cooking liquid is creamy, about 30 minutes. Let stand 5 minutes prior to serving.
