Ingredients
1/4 small sweet potato1 tbl. peanut butter1 tsp agave (a natural sweetener..like honey, or just use honey)2 slices light whole wheat bread, or roll up in tortilla if you likefew slices of your favorite apple
Directions
makes one sandwich

mash all ingredients except bread together..you can even do this right on the bread if you like.

add apple slices
