YUMMY Apple Cake

Ingredients
Yummy Apple Cake6 apples - McIntosh (peeled, cored and chopped into chunks)1 tablespoon cinnamon5 tablespoons sugar 3 cups flour, sifted1 tablespoon baking powder1 teaspoon salt ½ cup applesauce ( I use the one with cinnamon) 2 cups sugar1/4 cup apple juice (can use orange juice if you want)2 1/2 teaspoons vanilla4 eggs (beaten)1 cup walnuts, chopped 1 Oz raisins or small box (reconstitute and plump up in 4oz of hot water: this takes about ½ hour so leave the time, dump out the water when raisins are plump use only the raisins.)Preheat oven to 350 degrees. Grease the loaf pans (One large and one small or two medium). Toss apples with cinnamon and sugar and set aside.Stir together flour, baking powder and salt in a large mixing bowl.In a separate bowl, whisk together oil, apple juice, sugar and vanilla.Mix wet ingredients into the dry ones.Add eggs. Mix.Add the apple mixture, walnuts and reconstituted raisins. Mix together thoroughly.Scrape down the bowl to ensure all ingredients are incorporated.Spray Grease the loaf pans with Pam. Pour into one large or two medium loaf pans. Bake for about 40-45 minutes, or until a tester comes out clean.
Directions
Preheat oven to 350 degrees. Spray a loaf pan with Pam.
Peal and core and chop apples into chunks. Toss with Cinnamon and sugar and set aside.
Stir together. flour, baking powder, and salt in a large mixing bowl. Stir together applesauce, juice, sugar, vanilla in separate bowl. Mix well the wet and dry ingredients together. Add eggs one at a time. Scrape down bowl. Add the raisins and walnuts and be sure all are mixed together well. POur batter into two medium sized greased loaf pans and bake in a 350 oven for about 40 minutes or until a toothpick comes out clean.
