Southbeach chili

1 tbsp extra virgin olive oil1 lrg onion, chopped2 celery stalks, chopped3 garlic cloves, minced1 tbsp chili powder1 tbsp dried oregano.5 tsp salt2 15 ounce cans pinto beans1 14.5 ounce can of no salt added tomatoes.
In a large saucepan, heat oil over medium heat. Add onion, celery, and garlic; cook, stirring until vegetables begin to soften, about 7 minutes. Add chili powder, oregano and salt; cook, stirring occasionally, 5 minutes more.
Add pinto beans and tomatoes with their juices. Add browned beef. Bring to a gentle simmer and cook, stirring occasionally, until chili is fragrant and slightly thickened. 25 to 30 minutes more.
Makes 4 (2 cup) servings.
