Asian Barbecue Chicken

Ingredients
1/4 cup packed brown sugar1/4 cup low-sodium soy sauce1 Tbsp lime juice1/2 tsp red pepper flakes1/4 tsp curry powder3 Tbsp minced garlic4 boneless, skinless chicken breasts (5 oz each)
Directions
Combine first 6 ingredients in a large ziploc bag; add chicken. Seal and marinate in refrigerator for 4 hours, turning occasionally.

Preheat foreman grill. Remove chicken from bag, reserving marinade. Place reserved marinade in small saucepan. Bring to a boil; cook 1 minute.

Place chicken on foreman grill coated with cooking spray; cook for 6 to 8 mintues or until done; basting frequently with marinade.

    Fixed this for dinner and everyone loved it! Did a quick saute on some onion and green pepper slices to top it. Served over a cup of rice and dinner was a hit! - 8/17/11
