Carrot Apple Muffins

Ingredients
1 1/4 cups whole wheat flour1/4 cup granulated sugar1 tsp cinnamon1/2 tsp baking soda1/2 tsp baking powder1/4 tsp salt1 cup grated carrots1/2 cup unsweetened applesauce2 eggs1/4 cup soymilk1/4 cup canola oil1 tsp vanilla
Directions
Mix dry ingredients in large bowl. Mix wet ingredients in small bowl. Add wet ingredients to dry and mix just until no dry ingredients are visible. Bake at 350 for about 18 minutes. Makes 9 muffins.
