Blackened Chicken

Ingredients
1/2 tsp paprika1/8 tsp salt1/4 tsp cayenne pepper1/4 tsp thyme1/8 tsp white pepper1/8 tsp onion powder2 boneless, skinless chicken breasts (5 oz each)1/2 Tbsp olive oil
Directions
Preheat oven to 350 degrees. Spray baking dish with cooking spray: set aside.

Mix all spices together and rub one side of each chicken breast with spice mixture. Heat oil in a nonstick skillet over high heat.

Place chicken in hot pan, seasoned side down and cook for 1 minute. Turn and cook 1 minute on the other side. Place breasts in prepared baking dish. Bake in preheated oven for 8 to 10 minutes or until no longer pink and juices run clear.

Yield: 2 Servings
