Beef quinoa stew

1 tbs olive oil1 large onion, chopped5 cloves garlic, crushed1 sweet potato, cubed1 lb tenderloin cubed1 can diced tomatoes1 bag frozen veggies1 box reduced sodium chicken broth1 box 365 Creamy Portobella Mushroom soup4 cups water1 cup quinoa
Heat olive oil in a large pot, add garlic and onion and let soften. Add beef, and brown slightly. Add diced tomatoes and sweet potato. Let cook for about 5 minutes before adding liquid ingredients (broth, soup and water). Add quinoa and frozen veggies. Bring to a boil for 10 minutes, then reduce heat and let simmer for up to 8 hours. Add salt and pepper to taste. Makes 12-15 servings of about a cup depending on how long you let the stew cook down.
