Broccoli & Cauliflower Soup

Ingredients
2 Tbsp Olive Oil1/2 Cup Chopped Onions3 Cloves Chopped Garlic6 Cups Chicken Broth3 Cups Fresh Broccoli (2 crowns)3 Cups Fresh Cauliflower (half lg, head)1 Cup Sharp Cheddar Cheese2 Cups Potato FlakesI usually start with:1 tsp salt1 tsp lemon pepper1 tsp thyme1/4 tsp cayenne pepper
Directions
Saute onion and garlic in heated olive oil until translucent.

Add Chicken Broth, broccoli and cauliflower. Simmer 30 minutes.

Make smooth with blender or immersion blender.

Add 2 cups potato flakes, stir in and let sit for a minute, stir again.

Stir in cheese.

Season to taste with salt, lemon pepper, thyme, cayenne pepper.

Serve with Hot Crusty French Bread and/or browned slices of sausage. Enjoy!
