Stacy's Super-Fresh Fritatta

8 Large Eggs1/2 Cup Milk (2% used for nutrition info)3 Cloves Garlic, crushed1 Scallion, chopped1/4 Cup Basil, sliced1/2 Cup Grated Carrot, about 1 medium1/4 tsp Ground Nutmeg1/4 tsp Sea Salt (or table salt), or to taste1/4 tsp Ground Black Pepper, or to taste6 slices from 1 Large Red, Ripe Tomato1 Tbsp Grated Aged Gouda Cheese (or hard parmesan)
Makes 6 servings for brunch, or can make 4 larger servings for a main dinner dish.
Whisk together eggs and milk until combined well.
Add in the rest of the ingredients except for the tomato and cheese, which will be added later.
Pour mixture into an oven-safe skillet, cast iron is best. Spray with oil if desired or necessary first.
Bake in a preheated 350-degree oven for 15 minutes or until partially set. Remove from oven, and place tomato slices around edge on top to define the 6 serving pieces. Sprinkle cheese on top. Sprinkle with an extra dash of nutmeg and/or pepper if desired.
Bake for an additional 20-25 minutes until cooked through in middle.
