500gms.fresh tender French Beans5-7 hot Green ChilliesSalt to taste1 dash Black Pepper Powder1cup WaterSEASONING1 tbsp.Sesame Oil2tsps.Black Mustard Seeds1tsp.Turmeric Powder1 tsp.Asafoetida(Hing)PowderGARNISHING1 small bunch Fresh Coriander(Cilantro)Leaves0.25 cup shredded Raw Coconut(Optional)
PREPARATION
String and remove the ends of the French Beans.Wash in a colander and allow to drain for some time.Slice into thin strips horizontally and keep aside.Slit the hot Green Chillies lengthwise and finely mince the Fresh Coriander Leaves.
METHOD
Heat Oil in a wok and lower flame.Add Black Mustard Seeds and when these sputter add the Turmeric and Asafoetida Powders in the order given.Add 0.5 cup of plain Water and the finely chopped Vegetable and mix well.Add the Salt to taste and slit Green Chillies and mix well.Cover with a lid and pour a little Water over it.Cook on low flame till done.Sprinkle in the Black Pepper Powder. Mix well and allow flavours to assimilate for a further 1-2 minutes. Garnish with finely chopped Fresh Coriander Leaves . Remove from heat and serve hot as a side dish with your meal.
