Coconut Chicken Curry

Ingredients
Chicken Breast, no skin, 12 ounces*Coconut Milk, 0.6 cupOnions, raw, 1 cup, chopped*Canola Oil, 1 tbsp Brown Sugar, 4 tsp packed *Chick Peas, 1 cup Tomatoes, diced or chopped, 2 cupsSpices (garam masala, curry spices, salt and pepper to taste)
Directions
Heat a pan with the oil. Chop up chicken breast and onion, saute over med-high heat until partially cooked. Add spices and let cook a few minutes longer. Add coconut milk and tomato, let simmer for 30 minutes.

    It turned out good but I would have preferred knowing how much seasoning the author added to take the guesswork out of the recipe. I put in all sorts of seasonings and thank goodness it turned out tasty. - 5/5/11
