Cajun Sweet Potatoes with Sausage

Ingredients
1 16 oz. package smoked sausage (may substitute turkey or low fat variety to reduce calories considerably)2-3 large sweet potatoes (6 cups cubed)1 med. vidalia onion, chopped2 cloves garlic, minced1 sweet red bell pepper, diced1 1/2 Tbsp. olive oil2 Tbsp. Cajun seasoningsalt and pepper to taste
Directions
Makes 8 servings: preheat oven to 425 degrees.

Drizzle 1 Tbsp olive oil in large casserole or baking pan. Heat for 30 seconds on stove over medium heat. Add onion, garlic, and red pepper. Cook over med. heat approx 2-3 minutes, stirring occasionally.
Slice smoked sausage into 1/2" thin slices. Add to pan. Cook until slightly browned. Dice sweet potatoes and add to dish. Add cajun seasoning and stir until mixed. Drizzle with remaining 1 Tbsp. olive oil.

Bake in preheated oven approx. 45 minutes or until until sweet potatoes are cooked to your preference (35 minutes still a little firm, 60 minutes mushy)

Serve immediately.

    Definitely full of flavors! A tad spicy for me; hubby suggested we add a dash of sugar next time. Also, you forgot to include sweet potatoes in the ingredient list, and instructions cite 2 tbsp olive oil, when ingredients say 1.5. Overall not bad, and highly adaptable. - 3/31/10
