Turkey Stroganoff from leftovers

1 cup chopped onion6 oz. baby bella mushrooms, sliced1 cup chopped cooked turkey breast1 can cream of onion soup( or celery, or mushroom)1/4 cup fat free onion dip2 to 4 oz whole wheat pasta, cooked (I used 2.5 oz.)
Makes two generous portions.
Cook pasta per package directions and drain. Spray a one and a half quart casserole dish with cooking spray. Add chopped onion and mushrooms to casserole. Cook onions and mushrooms on high in covered casserole in microwave for 3 minutes. Remove dish from microwave. Add in remaining ingredients, stir gently. Cover and cook on high for 10 minutes in microwave.

Outstanding! Wonderful recipe for turkey leftovers (chicken would work too). Had a large cooked turkey breast leftover from thanksgiving and was looking for somethng easy. This recipe was pefect. I added red and green peppers along with spinach to the onions and mushrooms. Highly recommended! - 1/11/15
