Mashed Caulifower

Ingredients
One head of cauliflower1/4 cup of low fat ranch salad dressingSalt and pepper to taste
Directions
Makes 4 -6 side servings depending on the size of the cauliflower.

Cut greens from cauliflower and cook either by steaming in a pot on top of the stove, vegetable steamer or microwave until soft.
Drain cauliflower and put in a large bowl or food processor with ranch dressing.
At this point mash as you would mash potatoes. I prefer a really creamy texture so I either use my food processor or a an electric hand whipper.
Add salt and pepper to taste. This dish can be made ahead of time and reheated.
