Thai Peanut Sauce

Ingredients
3/4 cup low fat coconut milk 6 T peanut butter, I use chunky2 T Thai fish sauce2 T fresh lime juice2 T honey 4 T fresh finely chopped cilantro
Directions
Add all ingredients together in microwave safe bowl. Microwave for 1 to 1.5 minutes to melt coconut milk and peanut butter. Whisk together. One serving is 1/4 cup. Makes 6 servings.

    It's a sauce made out of fish. You get it in the oriental section of the grocery store.

    It's even better when you marinate the chicken in lime juice, ginger, and garlic before cooking the chicken.

    It's not oil, its a water based fish sauce. You can omit it.

    This was very good. I subbed soy sauce and rice vinegar for the fish sauce because I didn't have any on hand. I also threw in some red curry paste. Served over spaghetti squash with raw veggies on top. The sauce was rich enough to complement the squash perfectly. - 12/28/15

    Put this over chicken and wheat blend spaghetti noodles. It was pretty good. Too much lime juice for my taste and it was a bit runny. Other than that it was good! - 1/24/10
