Ingredients
1 cup Water1.5 cups Bread Flour1.5 cups Whole Wheat Flour1.5 tablespoon Brown Sugar1.25 teaspoons Salt.25 teaspoon Cinnamon2 teaspoons Yeast2 tablespoons Sugar
Directions
Throw first 7 ingredients in bread oven in order of your instructions. Put on manual or dough setting Put on floured surface and divide into 9 pieces. Form small balls out of each piece. Stretch a hole with your thumb in the middle, allow to rise for 10 minutes.

In an electric skillet, bring to a simmer approximately 3 qts of water and 2 TBL sugar. Place a few bagels at a time in boiling water. Simmer for 3 minutes, turning each bagel once (I flip ever 1-1/2 minutes). Remove with slotted spoon and put on a greased baking sheet.

Brush with egg and sprinkle with your choice of toppings. (I put oatmeal on the one in the picture.) Bake at 400 degrees for 20-25 minutes or until done; cool on wire rack.

You can also make these manually by kneading on the counter.

A bread oven is a small appliance that can actually knead your bread and bake it... although in this recipe, it is only used to knead the bread on a manual or dough setting, then taken out to form the bagels.

they didn't seem to rise that well, it may be that i kneaded the dough by hand...but otherwise very good. - 2/28/10
