2 peeled eggplants about 27 oz makes 8.9 cubes cubed1/2 jar of marinara sauce about 2 cups4 oz fresh mozzarella not shredded but it will work garlic 3 small cloves chopped roughly Italian style breadcrumbs 1 cup3 Tbsp of Extra virgin olive oil
in a mixing bowl or casserole dish cut eggplant into bit size pieces and coat with olive oil and bread crumbs, add roughly chopped garlic cloves to the mix, add marinara sauce and chop small bite size pieces of fresh mozzarella to sprinkle over top of the dish. cover casserole dish in tin foil, make cuts in top of tin foil to allow steam cooking. Bake in a 350 oven for 45 minutes
