Sage and Pumpkin Risotto

Ingredients
1/2 tbsp butter 1 tsp Olive Oil1/2 cup minced Onions4 cloves Garlic, minced 2 cups arborio rice 1/2 cup White Wine5 cups low sodium broth (any kind), heated to a simmer1 tbsp dried Sage2 cups pumpkin, roasted whole, peeled , seeded, and mashed 1/3 cup Grated Parmesean Cheesesalt & pepper to taste
Directions
Sautee garlic and onion in olive oil and butter over medium heat until fragrant. Add rice and stir for 5 min. Add wine and stir until little liquid is left. add the sage, and 1 cup of broth, and stir until liquid is absorbed. repeat with the remainder of broth. add pumpkin, heat through, shut off the heat, add the cheese, salt, and pepper, and serve.
