Chocolate made with Coconut Oil

Ingredients
5 Tbsp Coconut Oil5 Tbsp Cocoa Powder, unsweetened5 Tbsp Coconut Flakes, unsweetened1 tsp sugar1 single serving packet NOW Stevia
Directions
Makes 30 pieces.

Melt coconut oil in microwave, mix in cocoa powder, coconut flakes, sugar and stevia. Mix well then pour into 8x8 pan. Put in fridge for 1 hour or in freezer for 30 minutes. Break it up with spatula and enjoy! Freezes well!

    My whole family loves this chocolate. I especially love that it is made with coconut oil. I have changed all of my oil from olive to coconut. I read that it has tremendous health benefits, including raising your metabolism. That gives me a reason to eat chocolate... What could be better? - 5/23/10

    I made a modified version of this, reducing the cocoa powder, adding chopped nuts, and vanilla - and it is delicious. I keep it ready-made in the refrigerator for those "chocolate moments" that pop up now and then! - 5/6/10
