Vegetarian Black Bean Chili

1 medium onion, chopped1 teaspoon Spice World minced garlic (or 2 cloves chopped garlic)1 14-oz can diced tomatoes2 15-oz cans black beans (I used Bush's low-sodium)1 8-oz can corn1 package Morningstar Farms soy crumbles2 tablespoons chili powder2 tablespoons ground cumin1 cup water1 dash salt1 dash pepper(optional) 1/4 teaspoon cayenne pepper - I did not use.
1. Saute onions and garlic in large saucepan sprayed with non-stick spray until tender.
2. Add diced tomatoes, black beans with liquid, corn (drained), water, and soy crumbles. Cook on medium heat.
3. Add chili powder, cumin, salt and pepper to taste. Add ground red pepper for a spicier flavor.
4. Simmer uncovered for 30 minutes until desired consistency.
