Chicken and Feta

Ingredients
4 chicken breasts2 tbsp olive oil2 summer squash sliced paper thin2 medium leeks (white part only) sliced paper thin15 baby bella's sliced thinchicken rub from chickenrub.com (1 tbsp)sardinian feta (.14 pounds)
Directions
slice chicken breasts into thin sautee type pieces and sprinkle with the chicken rub

Slice leeks, squash and baby bella's into paper thin slices

sautee leeks, squash and baby bella's in 1 tabsp olive oil

remove from heat, place in shallow dish with rim and cover with very thin slices of the sardinian feta (cover)

sautee chicken in 1 tbsp olive oil

pour over the summer squash, leek, baby bella and sardinian feta dish.

It is ready to serve over brown rice if desired.
