Backyard Barbecue Chicken Salad

2 skinless boneless chicken breasts, seasoned1 1/3 cup frozen corn2 cups chopped cabbage1 tbs Helmann's Real Mayonnaise7 cups chopped green leaf lettuce1/4 cup diced red onion2 oz (2 sq. in) Cheddar cheese (50% red. fat Cabot)Dressing:4 tbs Barbecue Sauce (I like Stubb's Hickory Bourbon)1 tbs Apple Cider Vinegar1/2 tsp Spicy Brown Mustard
Fully cook seasoned chicken breasts. Set aside and cut into bite-sized pieces.
Cook corn according to package directions. Drain and rinse with cold water.
Combine cabbage and mayo. Put in salad bowl.
Add lettuce, onion, corn.
Add dressing and toss to coat.
Divide the salad onto two dinner plates.
Add chicken and cheese.
Enjoy!
