Saffron rice with shallots

Ingredients
1.5 cups rice3 cups water1 tsp saffron1 shallot, minced2 TBS olive oil
Directions
Saute shallot in olive oil over medium heat. Add rice and saute for 2 mins. Add water, saffron, and bouillion cubes. Bring to boil. reduce heat to low and simmer 20 mins. Let sit 5 mins before fluffing and serving.
