Lo-Carb Pumpkin & Sausage Soup

Ingredients
1 15 oz can Pumpkin1/2 c Sour Cream1/2 C Milk1/2 C water1/2 C onions, minced1 C fresh mushroooms, chopped2 cloves garlic, minced3-4 Morningstar farms veggie sausage patties (diced)5 c chicken or veggie broth1 tbsp Italian seasoning
Directions
Over medium heat, warm the veggie sausage patties. Remove from pan, let cool, and then dice. in a pot, put the diced sausage and add the onion, garlic, Italian seasoning and mushrooms and saute until vegetables are cooked. Add the canned pumpkin and the broth, stirring to mix well. Cook at a low simmer for 20-30 minutes. Remove from heat and stir in milk, sour cream and water.
