Banana Mini CupCakes

2 cups mashed bananas (about 6 medium)3/4 cup STEVIVA blend 3/4 cup fat free or low fat sour cream1 1/2 tsp baking powder1 tsp baking soda2 1/4 cups white whole wheat flour1 tsp vanilla extract
Preheat oven to 350 degrees. Spray a mini muffin pan with non-stick spray.
Mash bananas, then add beaten eggs, sour cream, vanilla and steviva. Blend. Add remaining ingredients. Blend with a mixer on medium for about 2 minutes.
Pour into pan and bake for 20-30 minutes.
Serves 30
OPTIONAL: Ice with Cream Cheese Icing
