Asian Noodle Bowl

Ingredients
2 cups diced cooked chicken2 cups thinly sliced bok choy1/2 cup thinly sliced green onions with tops8 oz mushrooms, sliced1/2 cup julienne-cut carrots 1 inch long2 garlic cloves, pressed3 cups water 1 can (14oz) 100% fat-free vegetable broth2 tbsp reduced-sodium soy sauce2 cups lo mein noodles
Directions
Dice chicken and thinly slice bok choy and green onions; set aside. Slice mushrooms. cut carrot into julienne strips; cut strips into 1-inch pieces. Peel ginger root; finely chop.

Place mushrooms, carrots, ginger root and garlic in 4 qt. sauce pan. Add water, broth, and soy sauce; bring to a boil over medium-high heat. Add chicken, bok choy, onions and noodles. Cover; remove from heat. Let stand 3 minutes. Serve immediately.
