Fresh Apple Cake

Ingredients
2 cups rice flour (can use any flour)3 tsp. cinnamon2 tbsp. baking powder1 tsp. salt11/2 cups applesauce or oil2 cups fructose4 eggs3 cups apples, chopped1 cup hazelnuts, chopped (optional)
Directions
Sift together first 4 ingredients. In a large bowl combine applesauce, fructose and eggs; add dry ingredients. Fold in apples and nuts. Bake in greased bundt pan in a 350 oven for 40 to 50 minutes.
I used mini muffin tins and just check after 20 minutes of baking. Will be done when toothick comes out clean.

    As someone who follows a gluten free diet I loved these. I ue pumpkin instead of applesauce. I would only use 2 tsp of cinnamon. - 11/22/12
