Turkey Sausage with Tomatoes, White Beans, Broccoli Rabe and Pasta

Ingredients
1 large bunch of Broccoli Rabe, tough stems removed, chopped into 1" pieces1 T. Olive Oil1 20 oz. package Turkey Sausage3 cloves garlic, chopped1 20 oz. can of white beans, drained and rinsed2 14.5 oz. cans of diced tomatoes with Basil, Garlic and Oregano, undrained1 14.5 oz. box Whole Wheat or High Fiber short pasta (such as rotini), prepared per package instructionsGrated Parmesan cheese (optional)
Directions
Bring a medium pot of water to a boil. Add Broccoli Rabe and cook for about 6 minutes or until slightly tender. Drain, rinse under cold water, set aside.

Heat oil in a large non-stick pan over medium-high heat. Remove sausage from casings. Saute until the meat is cooked and the garlic is tender. Add reserved broccoli rabe, beans and both cans of tomatoes; saute until flavors have blended and mixture is heated through. Serve with pasta, and grated Parmesan cheese (optional).

    I didn't have any tomatoes so omitted them from recipe but added 1/2 cup chicken broth & 1/4 cup white wine for liquid. Worked out well & was super tasty. - 9/24/13

    Very good, but I had to make so many substitutions! Used broccoli, italian sausages, organic spelt pasta, marinara sauce, left out garlic (wasn't time), left out beans... and I had taken the time to cook the beans too..just forgot to add them as I was very rushed at suppertime. Will try again! - 2/25/10
