Chicken Scampi

Ingredients
1 lbs Linguine pasta1 lbs Bonless skinless chicken breast (sliced 1/4" strips)4 Tbsp Unsalted butter2 Tbsp All purpose flour3/4 cups 2% milk (hot)2 Tbsp Garlic (fresh minced)1 medium Red onion1 cup Fresh mushrooms2 tsp Italian seasoning1 tsp Ground black pepper2 Tbsp Olive oil
Directions
***Step One*** White Sauce
Melt 1 Tbsp butter in a sauce pan over medium low heat. Once melted, slowly add in your flour slowly; stiring constantly to prevent large lumps. Cook for 2 minutes to cook out the raw flavor. Add milk and cook until thick; stiring constantly. When the sauce reaches a consistancy of a medium thick gravy, remove from heat.

***Step Two*** Scampi
Melt 3 Tbsp butter in a sauce pan over medium heat. Add in garlic, ground pepper and Italian Seasoning and cook for 3 minutes stiring occasionally. Your garlic should NOT start to brown. Add in your chicken broth and the wine. reduce the heat to medium low and allow to cook for 15 min.

***Step Three*** Should be boiling while step four is being completed
Boil your linguine over medium high heat for 11 minutes then drain and place in a large serving bowl

***Step Four*** Combining Ingredients
Heat olive oil in a large pan. Add in your chicken and saute until almost done. Add your onion and mushrooms and finish cooking the chicken until done and onions are translucent.

Add 1/4 cup to 1/2 cup warm white sauce to your scampi. Stir the sauce and scampi until well incorporated and thickens until the consistancy of a thin gravy. Pour over chicken and cook for an additional 10 minutes to thicken and coat the chicken.

Pour chicken mixture over the hot pasta and serve immediately.

This will make 10 1-cup serving
