1/2 cup Cottage Cheese, 1% milkfat1/4 cup Kidney Beans, drained & rinsed (65 grams)32 grams fresh Red Bell Pepper, diced32 grams fresh Green Bell Pepper, diced32 grams fresh Celery, diced20 grams chopped Red Onion (or Vidalia Onion), diced42 grams fresh Broccoli, diced42 grams fresh Carrots, diced100 grams fresh ripe Tomato, diced (substitute canned tomato in winter for best flavor)1/2 tsp Mexican Spices (chili, cumin, cilantro) or to tasteFreshly ground black pepper to taste.
