Ingredients
2 garlic cloves1 medium onion2 medium carrots1 medium red pepper1 celery stalk2 small zucchini2 cups green cabbage2 cups kale2 cups cauliflower2 cups broccoli2 tsp thyme8 cups low sodium vegetable broth2 tbsp parsley1 tsp salt½ tsp pepper
Directions
Put vegetables, thyme, and stock into pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer 10 min or until desired tenderness. Turn off heat, add parsley, salt and pepper. Yields about 1 1/2 cups per serving.
