Oatmeal Pancakes with Wild Blueberry Sauce

Ingredients
Oats, 1.5 cup Buttermilk, low fat, 1 cup *Flour, white, 1 cup *Whole Wheat Flour, 0.5 cup Granulated Sugar, .25 cup Baking Soda, 1 tsp Baking Powder, 1 tsp Salt, .5 tsp Cinnamon, ground, .5 tsp Egg, fresh, 2 large Egg white, 2 serving Milk, 1%, 1.5 cup
Directions
Combine flours, 1/4 C sugar, 1 t baking soda, 1 t baking powder, 1/2 t salt and 1/2 t cinnamon in medium bowl. Whisk 2 large eggs together with 2 large egg whites in a small bowl, and stir in 1.5 C low fat mild. Add dry ingredients to wet and stir. Heat skillet with cooking spray. 1/2 cup batter per pancake.

Serving = 2 pancakes

Combine 2 C frozen wild blueberries, 1/4 C sugar, and 1 T lemon juice in med sauce pan. Cook over medium heat until berries pop. Stir in 1/4 t cinnamon. Spoon blueberry sauce over pancakes; serve. Makes about 12 pancakes

    I made this today and use old-fashioned oatmeal, replaced granulated sugar with organic coconut palm sugar (calories 16 of 1 tsp, sodium 3mg, total carbohydrates 4g, sugar 4g. Taste good. I did not have the egg white, use 2 large eggs and omitted cooking spray. - 3/29/16
