Lentil Burgers

1 cup brown rice, cooked2 tablespoons oilve oil1/2 cup chopped onions3 cloves garlic, chopped2 tablespoons curry powder11/4 cups vegetable broth1/2 cup lentils1 cup mushrooms1 cup breadcrumbs1/2 cup shredded cheddar cheese1 tablespoon parsley1 egg2 egg whitescanola oil for frying
Makes 8 patties (2 patties per main dish serving)
Heal olive oil in skillet, saute onion and garlic for 5 minutes, add mushrooms, curry powder raw lentils and rice and toss to coat with spice. Stir in vegetable broth and simmer covered for 15 - 20 minutes (until lentils are tender and most of the brothe is absorbed). Cool lentil misture them add cheese, bread crumbs, egg, egg whites and parsley and mix well. Shape into 8 patties and chill in refrigerator for 30 minutes. Heat 1/4 cup of canola oil in skillet and when hot gently fry patties until done (about 5 minutes on each side) and drain on paper towels.
