Chocolate Chip Banana Bread

*Put milk and vinegar in a cup and let sit for 2-3 minutes.
*Set oven to 325*. Spray mini loaf pan with cooking spray (we have a pan with four mini-loaves in it).
*In a large bowl, mix egg substitute, milk, applesauce, and banana.
*In a medium bowl sift together Splenda, flour, baking soda, and salt.
*Add the dry ingredients to the wet and stir it up.
*Add 6 Tbsp. mini chocolate chips and stir.
*Split the batter between the four loaf pans (about 1 cup each)
*Sprinkle 1 Tbsp. of chips over each loaf
*Bake for 55 minutes
*We cut this into 8 servings. This was a fun Saturday afternoon snack for the family so our pieces were a little big. You could easily cut each loaf into thirds or even fourths to make the servings smaller.
*Note that you can use buttermilk instead of mixing milk with vinegar, but this will change your nutritional info.
