Potato salad with dill

Ingredients
2 pounds unpared red potatoes2 Tbsp canola oil2 1/2 Tbsp cider vinegar2 Tbsp finely chopped onion1/4 cup finely chopped green bell pepper3/4 cup finely sliced celery1 tsp salt1/2 tsp dried dill weed3/4 cup mayonnaise
Directions
Boil potatoes in jackets until tender; drain, cool, peel and dice. Mix oil and vinegar with a whisk in large bowl, add potatoes and toss until well coated. Add remaining ingredients, mix well. Refrigerate for several hours. Serve on lettuce leaves. Serves 6 - 8 (nutrition calculations based on 6 servings).
