Ingredients
* *Whole Wheat Flour, 0.5 cup * *Wheat flour, white, all-purpose, unenriched, .5 cup * Baking Soda, .5 tsp * Salt, .125 tsp * Vanilla Extract, .5 tsp * Egg white, 1 serving * Brown Sugar, .5 cup, unpacked * Butter, salted, 2 tbsp * *Motts Natural Applesause (No Sugar Added), 0.25 cup * *Yoplait Light Vanilla Yogurt (6oz), .145 serving * Blueberries, fresh, 1 cup
Directions
combine dry ingredients
cream together butter, applesauce, yogurt, and brown sugar
then add egg and vanilla
then stir in dry ingredients
add blueberries and bake at 350 for 10-15min

    Absolutely delicious
    For me there were too many blueberries. I only used half of the suggested and there were still too many. I will use a 1/4 the next time I make it.
    Oh, I also used all whole wheat flour.

    I didn't have yoplait so I used Oikos Greek yoghurt with honey and I had so many blackberries that I used those instead. The muffins turned out well, very moist and tasty! Ooops got flour all over my laptop. Thanks for sharing! - 6/15/10
