Slow Cooker Curried Lentil Stew

Ingredients
1 - 28 oz can diced tomatoes1 - 10 oz can RoTel Original Diced Tomatoes with Green Chilies (optional)1 C dried brown lentils1 medium onion, diced3 cloves garlic, pressed or minced1 rib celery2 carrots2 potatoes (about 12 oz)4 C low sodium vegetable broth3 bay leaves3 Tbsp curry powder1 tsp ground cumin1 tsp coriander
Directions
Place ingredients in a slow cooker. Stir well. Cook on low for 8 - 10 hours.

NOTE:
This dish will be very spicy if you use the RoTel tomatoes!
