Use this recipe when you have a good-sized collection of overripe bananas in your freezer!2 c. flour (1 c. whole wheat w/ 1 c. all-purpose or use all wheat)1 c. organic sugar2 ½ tsp. baking powder¾ tsp. baking soda½ tsp. salt5-7 mashed, thawed overripe bananas1/2 c. light butter3 Tbsp. milk4-5 egg whites¾ bag of semi-sweet chocolate chips
Oven- 350’. Combine 1 c. of flour with sugar, powder, soda, and salt. Add banana. Add butter/margarine & milk. Beat till blended; then 2 minutes faster. Add eggs and rest of flour and chocolate chips. Blend. Pour into two greased loaf pans, or four mini-loafs and one large loaf. Bake 50 minutes. Let cool. Wrap and store overnight or eat warm! Makes 2 loaves, or 32 small slices.
