Zucchini Fritta

Ingredients
0.5 tbsp butter0.5 cup chopped onion1 cup zucchini1 oz shredded Colby jack cheese6 large eggs1 tsp extra virgin olive oil2 tbsp 2% milksalt and pepper to taste
Directions
preheat over to 350 and place a ten inch skillet on medium heat. Add butter to pan, add chopped onion, and zucchini. Saute until translucent. Beat together eggs, milk, olive oil and salt and pepper to taste. Add to zucchini mixture. Lift sides and let excess egg mixture go to sides and bottom continue until almost set. Add cheese and place in oven from 5-7 minutes or until center is set and cheese is melted. Take out of pan and allow to rest for a few minutes then slice into ten slices.
