Pumpkin Pie Oatmeal

1/2 cup dry Old Fashioned Oats3/4 cup water1/4 cup canned pumpkin1 packet Equal1/4 tsp cinnamon1/4 tsp vanilla
Add dry oats and water to a microwave safe bowl. Microwave on high for 2 minutes. Stir in pumpkin, cinnamon, vanilla and Equal (or other sugar free sweetener). Enjoy!

This was good, but could have used a bit more flavor. I added pumpkin pie spice in addition to the cinnamon, but I think doubling the vanilla extract might help here. I used Truvia instead of Equal, and added some extra water with the pumpkin and microwaved for an additional 30 seconds. - 10/12/14
