Faux Potato Salad

Ingredients
5 cups cauliflower, cooked16 tbsp fat free mayonnaise 1/4 cup yellow mustard1 tbsp yellow mustard seed1/4 cup dill pickles, chopped or diced1/4 cup celery, diced1/2 cup cucumber (with peel), sliced1 cup hard boiled egg, chopped1/2 tsp garlic powder
Directions
Cook one head of cauliflower until it is the softness of a boiled potato. Chop and cool in the refrigerator until chilled.
Blend in other ingredients.
Egg can be chopped or you can simply slice one egg to put on top and save 17 calories per serving.
Chop the cucumber about the same size as the celery.
The basic premise behind this recipe is to use your favorite potato salad recipe, but substitue cauliflower for the potato and fat free may for the regular mayo.

    I make this a lot.....Be sure to cook the cauliflower good and drain well...don't want watery salad....I then just use what I normally would for potato salad....

    i didn't add the egg which means it's less calorie. this is really good. it tastes just about like normal potato salad except the texture is just a little different. i'm glad someone found a healthier version on potato salad i can enjoy picnics again!! - 5/30/07

    I made this yesterday. I love cauliflower & potato salad, this was great. I didn't have enough mayo but it was still so good. I ate nothing else for lunch except this.     This is pretty good! Not everyone's potato salad tastes the same, though, so I had to add some cider vinegar to this for it to work for me. Still, it was not a big winner with my family so I don't think I'll make it again. Cauliflower "mashed potatoes" is also terrific. - 7/9/08

    Another idea is to make sweet potato salad using whatever basic potato salad recipe you like--or this one with that substitution. Of course it will have more calories but also full of highly desirable nutrients. - 10/21/10
